Privacy statement

IMPOSSIBLE DRINKS B.V. — last updated 16 July 2026

We deal in rare bottles, not in personal data. This statement explains, in plain language, what we do with your details when you contact us or read this site, and what you can ask of us.

2. What we collect, and why

When you contact us. If you email, call or message us on WhatsApp, we receive whatever you choose to share — typically your name, email address or phone number, and the content of your request. We use it for one purpose: to answer you and, if it comes to that, to source and deliver what you are looking for. The legal basis is the performance of an agreement with you, or the steps taken at your request before entering into one.

When you are a client. To carry out an order we also process delivery and billing details. We keep those because we have to: Dutch tax law requires us to retain our administration.

When you simply read this site. Our host records standard server logs, including your IP address, for security and to keep the site running. We do not use these to identify you. The legal basis is our legitimate interest in a secure, functioning website.

Website statistics. We use Plausible Analytics to see which pages get read, so we can keep improving the site. It is a privacy-friendly service hosted in the European Union that sets no cookies, builds no personal profiles and cannot follow you across other websites. It reports aggregated numbers only, never who you are.

3. What we do not do

We place no cookies and store nothing on your device — see our cookie policy. We run no advertising or tracking scripts, we do not profile you, we take no automated decisions about you, and we never sell or rent your data to anyone.

4. Who else sees your data

Only the parties we need to do our work, and only as our processors:

  • Microsoft (Microsoft 365) — our email.
  • Netlify — hosting of this website and its server logs.
  • Plausible Analytics — aggregated website statistics, hosted in the EU.

We may also share data where the law obliges us to, for example with the tax authorities. Where a party processes data outside the European Economic Area, that transfer is covered by the European Commission's Standard Contractual Clauses.

5. How long we keep it

Correspondence that does not lead to an order: no longer than we reasonably need it, and in any case no longer than two years. Client and billing records: seven years, because Dutch tax law requires it. Server logs: a short period, in line with our host's retention.

6. Your rights

You may ask us to give you a copy of your data, to correct it, to delete it, to limit what we do with it, or to hand it over to another party. You may also object to processing based on our legitimate interest. Write to geert@impossible-drinks.com and we will respond within one month.

If you feel we have not handled this well, you are entitled to lodge a complaint with the Dutch data protection authority, the Autoriteit Persoonsgegevens (autoriteitpersoonsgegevens.nl). We would rather you told us first, so we can put it right.

7. Security

This site is served over an encrypted connection (HTTPS) and we take appropriate technical and organisational measures to protect your data against loss and unauthorised access.

8. Changes

If we change how we handle your data, we update this page and the date above.
